Healthy Crockpot Chicken Fajitas!!

I am so excited to try these crockpot chicken fajitas!  I got the idea because I've been pinteresting like a madwoman (boredom!) and I came across some great recipes for my new crockpot.  The original pin that I used is here with this link to pinterest.
 This is the first time I have used a slow cooker and I'm kind of nervous but I was SHOCKED at how easy it was.  
Don't get me wrong I LOVE cooking, but this literally took 5 mins to prepare and now it's cookin' away in my kitchen and my house smells amazing!  I have a feeling I will be using the crockpot a lot this winter.

Here is the recipe I used:
(I modified it a little from the original)

Healthy Crockpot Chicken Fajitas

Ingredients:
  • 1 lb chicken breasts
  • 3 bell peppers (red, orange, yellow), sliced
  • 1 large onion, sliced
  • taco seasoning, I made my own by: combining 1and 1/2 tsp mexican chili powder, 1/2 tsp cumin, 1 tsp paprika, salt and pepper
  • 1 cup chicken broth or stock
  • tortillas 
  • toppings: sour cream, shredded cheese, cilantro, avocado, etc.
Start by slicing the onion and the bell peppers approximately the same size, place them into the bottom of the slow cooker.  I sprinkled a little freshly cracked pepper on the peppers. ha ha no pun intended.

Place the chicken on top of the peppers and onions and season with the taco seasoning along with some freshly cracked pepper.  Pour the 1 cup of broth or stock over the chicken and set your slow cooker to the "low" setting.  Cook for 6-8 hours (I programmed mine to 7 hrs and hope it turns out well!)

  1. I found it a little bland so I would seriously add a TON more spice next time. Otherwise it was great, the chicken shredded beautifully and the veggies stayed crisp.
