Tired of the same boring old sauce you buy form the store? Here is a GREAT way to give your store bough sauce some personality. I promise this is super easy and it will taste delicious! I added the sweet onions just as a side dish but you can roast pretty much anything if you don't like onions. Squash, zucchini, etc. Never have boring sauce again :)
Ingredient List
- One large or two vidalia onions, sliced into 1 in thick slices
- 6-12 Roma tomatoes, sliced in half
- 1 head of garlic
- 2 tbs EVOO
- 1 tbs butter
- 2 small shallots or 1 large, diced
- 1 jar of store bought marinara sauce
- 1 tbs sliced basil
Let's give your sauce some personality
- Preheat your oven to the highest setting on your oven (mine was 500 deg)
- Roma tomatoes: cut in half length wise
- A whole head of garlic (minus one clove to be used later) separated into sections with the skin still on
- Vidalia sweet onions cut into one inch thick slices
- Lay them all out on a cookie sheet
- Toss with EVOO and salt and pepper
- Flip the tomatoes cut side down
- Slide the cookie sheet into the oven and roast for 25-30 mins or until the tomatoes look wilted and have charred skins
While the tomatoes are roasting let's get some more things going for the sauce
- One tbs of EVOO and one tbs butter into a large deep pan on medium heat
- Two small shallots or one large diced sauteed into the pan until they soften
- Add one clove of diced or grated garlic
- Saute for an additional minute
- Add store bought sauce
- At this point the roasted tomatoes should be close to being done, when they are take them out and dice them into small pieces, they should be very mushy
- Add the diced roasted tomatoes and roasted garlic into the sauce
- Add 1 tbs of fresh basil at the very end for a fresh flavor
